When he’s not keeping Orlando cool, you can find Mike exploring Central Florida’s best food trucks (he considers himself an expert-level food truck critic), carefully pruning his bonsai tree collection, or crafting incredibly detailed toothpick replicas of famous landmarks. And yes — the legend is true: Mike earned the nickname “Taco” after taking the championship title at the 2004 National Taco Eating Contest, consuming more tacos in 30 minutes than anyone thought humanly possible.
